Ingredients

  • 6 eggs
  • 225 gr of sugar-free dark chocolate
  • Sweetener to your liking, I recommend stevia or erythritol

Preparation

Chop the dark chocolate, place it in a bowl and take it to melt in the microwave. Do it at intervals so it doesn’t burn or lumps. Booking.

Take the eggs and separate the yolks from the whites. Beat the egg whites until stiff until a consistent texture is achieved. Mix the yolks with the melted chocolate and the sweetener (necessary amount), stir little by little so that they do not curdle.

When you have the mixture ready, integrate the egg whites until stiff with enveloping movements. Serve in cups or glasses and let rest in the refrigerator until cold. Add chopped hazelnuts on top and I assure you that it will be delicious!

2. Fruit skewers with orange liqueur

Do you need a quick light dessert? Fruits are the perfect alternative to get you out of trouble.

Ingredients

  • 1 piece of each of these fruits: mango, peach, pear, ½ small melon, apple, plum, kiwi, strawberries.
  • 1 tablespoon butter
  • 3 tablespoons of cream for light desserts
  • 2 tablespoons of water
  • Half a glass of orange liqueur
  • Cinnamon to taste

Preparation

Lava, peel and cut all the fruits, place them in a bowl, setting aside the melon. The latter, reserve it in a separate container and add a little orange liqueur.

Little by little insert the fruits into the skewer sticks, you can make the combinations you want. In a pan add 1 teaspoon of sweetener, water and butter, reduce this mixture to low heat. (The amount of sweetener is up to your taste)

Wait for it to cool down and add the juice that the melon has released, pour it on a plate and place the skewers so that they are soaked. On top distribute a little cream and sprinkle cinnamon.

3. Homemade coconut flan

Ingredients

  • ½ cup shredded coconut
  • 3 eggs
  • 1 Teaspoon vanilla extract
  • 400 ml almond or coconut milk
  • 50g brown sugar
  • 2 tablespoons of water
  • 2g Stevia

Preparation

For the caramel: In a pan (non-stick) place the brown sugar and the two tablespoons of water. She leads to medium-low heat and waits for a golden and shiny caramel to form. Once ready, pour it into the mold where you will bake the flan.

For the flan: With the help of a mixer, mix the eggs and stevia. Gradually add the milk, vanilla and grated coconut. Put it mix in the mold with the caramel and bake about 45 minutes at 180°.

4. Easy cake

The elaboration of this light dessert will take you only 5 minutes. You will save time and you will not have to count calories.

Ingredients

  • 3 tablespoons almond flour
  • 1 tablespoon coconut oil
  • 2 tablespoons light maple syrup
  • 4 tablespoons of vegetable milk (coconut, almonds, etc…)
  • 3 tablespoons oat flour
  • ½ teaspoon chemical yeast

Preparation

  1. Preheat the oven to 200°C.
  2. Melt the coconut oil in a cup suitable for the oven and distribute well so that the mixture does not stick. Booking.
  3. In a bowl, combine the maple syrup and milk of your choice, then add the rest of the ingredients.
  4. Pour the mixture into the cup and cook in the oven for 15 minutes. You can also cook it in the microwave for 1 minute at full power.

This cake is also known as mug cake and it is a good base to be creative and add whatever we want, chocolate chips, grated carrots, raisins, blueberries, nuts, among others.

5. Yogurt Banana Split

Ingredients

  • 1 slice of pineapple
  • greek yogurt
  • 1 handful of blueberries
  • 1 banana
  • light chocolate syrup
  • Big wave

Preparation

Divide the banana in two with a cut lengthwise. In a container place the separated halves and in the middle add the very cold yogurt to give the dessert a creamy texture.

Cut the pineapple slice into small pieces and add them on top along with the blueberries. Decorate with granola and syrup to taste.
